One of my favorite traditonal Polish dishes — potato pancakes. Served plain or topped with sour cream, mushroom sauce, or goulash. It's a bit time-comsuming, with peeling all the potatoes, but worth it.
 
Start by mixing shredded potatoes, a few eggs, various spices (usually thyme, I believe), salt and pepper in a bowl and mix
   
Put some lard into a frying pan
   
Add some garlic
   
Perhaps mix in a little cheese and another egg if your cholesterol level isn't high enough yet
   
Some flour to thicken it up
   
Pour it in the fying pan
   
Turn it so that both sides are golden
   
Dig in
